Mushroom Sauce The French Culinary Institute’s Salute to Healthy Cooking (Rodale Press, Inc., 1998)
Ingredients:
1 1/2 cups white mushrooms, brushed clean, stems trimmed
1 teaspoon olive oil
1/2 cup fat-free chicken broth
1 tablespoon fresh lemon juice
Salt and freshly ground black pepper
Instructions:
Preheat oven to 450°F . Brush mushrooms with oil and place on nonstick baking sheet. Place in oven and roast for 10 minutes. Stir to turn browned sides up. Return to oven and roast another 5 minutes, or until golden brown. Remove from oven.
Place mushrooms in a blender or food processor fitted with a metal blade. Add the broth and lemon juice. Process until smooth. Season with salt and pepper to taste. Serve immediately or refrigerate up to two days.
Serves four.
