Ham And Black-Eyed Pea Salad
“A Kwanzaa Celebration” (Dutton, 1995)

Ingredients:

3 15-ounce cans black-eyed peas 2 cups cubed cooked ham 1 cup chopped celery 1 large green bell pepper, ribs and seeds removed, chopped 1 medium onion, peeled and chopped 1 teaspoon mustard 1 cup mayonnaise, fat-reduced or fat-free 1 teaspoon each: salt and black pepper

Instructions:

Drain black-eyed peas and place in a large bowl. Stir in remaining ingredients. Chill one hour before serving.

Makes six servings.
